I believe food should excite, nurture and satisfy the soul.My Approach
I will prepare the food you remember fondly but have no time to cook for yourself. I feature slow cooked meats and sauces, homemade pastas, and soups and rustic breads and pastries.
I like to tweak my family recipes in the same way jazz musicians improvise on the classics. I honor the old traditions of slow cooking and hands on preparation while embracing innovative ways to use new ingredients.
I prepare my dishes from organic produce (some from my own garden) and Maui-grown products whenever possible, including free-range and antibiotic - free meats and poultry and wild caught fish.
Whenever possible, I want to promote the slow food movement, and organic farming by using seasonal fruits and vegetables and "Maui grown" and "Maui raised".
I use brines and marinades in my cooking for depth of flavor and incorporate the taste of the Islands by using what is locally grown and raised.
My cooking is pure, nutrient rich and flavor intensive.

Aloha- Although, as a resident of Maui for 25 years, I have been known as an artist I have never given up my other passion for cooking: the nourishment that comes from it, and the satisfaction that comes from sharing the creations from my kitchen.
I started out my cooking career in fine dining restaurants in Philadelphia. Before arriving on Maui, I resided in northern California for seven years where I ran a small business delivering my homemade specialties to homes and offices in the area as well as hosting private parties.
I have tweaked my family’s recipes and have developed many of my own as well. Although my roots are decidedly Italian, I’m comfortable with eclectic and Island cuisines. Now I am a private chef with a growing clientele.Notes from a Chef
Diana worked for me when I was the chef at 20th street Café in Philadelphia.
Diana was creative and energetic in the kitchen. She enjoys the process and outcome of cooking. Although it has been quite a while since we have worked in the kitchen together, we have remained friends over the years. I can say that Diana is responsible and whatever she does she puts in a hundred percent effort.
I am now owner/chef of my own restaurant The London Grill in the Art Museum Area of Philadelphia.
